I love zucchini and I’m sure this isn’t the only recipe with zucchini you will see on this blog.
In the summer I do like to eat something fresh but tasty, so transforming zucchini from comfort food into a fresh summery one wasn’t hard at all.
As with any pasta salad, this is easy to make, and healthy, and also you can prepare everything in advance.
Zucchini Pasta Salad
The perfect meal for a hot summer day – quick, healthy and easy
Ingredients
- 300 g pasta
- 500 g zucchini
- 200 g cherry tomatoes
- 300 g greek yogurt
- 150 g parmesan cheese shaves
- salt and pepper to taste
Instructions
- Boil the pasta and let it cool.
- Cut the zucchini into rounds and cook them in a pan with 2 tbsp of olive oil.
- In a bowl add the pasta, zucchini, cherry tomatoes, greek yogurt, and parmesan cheese.
- Mix everything together and add salt and pepper to taste.
