When I was little and lived in Italy, my mother used to make frittata every time she would make zucchini pasta and I loved it and still do. Whether it’s for breakfast, lunch, dinner, or just in between it’s healthy and you can eat it hot or at room temperature.
So do you want to know how is made? Here’s how:
Zucchini Frittata
Frittata is like an omlette only cooked slowly over low heat with a mixture of eggs, dairy and vegetables.
Ingredients
- 600 g zucchini
- 1 onion
- 4 cloves garlic
- 4 eggs
- 50 ml heavy cream
- 25 g gouda cheese ( or any cheese you like)
- 25 g parmesan cheese
- 10 g butter
- ¼ cup fresh basil
Instructions
- Cut the zucchini into rounds, the onion and the garlic.
- Grease the pan with butter and place the zucchini, garlic and onion in the preheated oven at 180° C for 10 minutes.
- In the meantime, in a bowl put the eggs, cream and cheesses, add salt and pepper per taste and the basil.
- Whisk everything together and put it over the baked vegetables.
- Let it bake for 10 minutes in the oven, but if you like it more baked then leave it for an extra 10 minutes.
Before serving I usually add some parmesan cheese just for taste and look. Buon appetite!
