This is the first time I`ve tried paccheri pasta. They look amazing but a little challenging to catch on the fork .
I had some roasted peppers in the freezer and thought it would make a great sauce for pasta. Bell peppers must be roasted and peeled.
Also I added a fresh sausage in the sauce, I used Toulouse sausage, if you want it to be a little spicy, you can add chili peppers as well.
Paccheri with roasted peppers
Ingredients
- 1 1 fresh sausage
- 200 g paccheri
- 1 shallot
- 2 cloves garlic
- 200 g roasted peppers
- basil and salt per taste
- parmesan cheese – as much as you like
Instructions
- Start by boiling the pasta according to the package instructions till al dente or more if you like.
- In a blender add the roasted peppers and blend until you obtain a creamy consistency.
- In a pan heat some olive oil. Add the shallot and garlic and leave it at medium heat for about a minute.
- Add the sausage peeled and let it cook. Add the peppers and basil and salt per taste. Let it simmer until the meat is cooked. If the sauce looks dry, add some pasta water.
- Drain the pasta and add it to the sauce, mix until it's combined.
- Serve it on a plate with parmesan cheese on top.
