Honey cake – Albinița

If you search honey cake on the internet most probably you will find the Medovik cakes, which are really famous and also delicious. But this recipe is Honey cake or as we called it in Romania, Albinița, which is something else.

You have 4 layers of honey cake filled with semolina cream and plum jam, and just to make it extra special I added on top chocolate glaze and coconut flakes.

Honey cake – Albinita

Trust me, this cake is worth your time. Soft and creamy, filled with semolina cream and plum jam, and topped with chocolate glaze and coconut flakes.

Ingredients
  

For the cake layers

  • 200 g butter
  • 2 eggs
  • 200 g sugar
  • 6 tbsp milk
  • 4 tbsp honey
  • 1 tbsp baking soda
  • 600 g flour

For the semolina cream

  • 500 ml milk
  • 120 g semolina
  • 30 g vanilla sugar
  • 200 g sugar
  • 100 g butter softened

Instructions
 

  • In a bowl resistant to heat mix the butter, sugar, eggs, honey, milk and baking soda.
  • Place the bowl over a Bain Marie and stir until everything is combined and stir until is caramelized.
  • Take it off the heat and add the flour, knead the dough until it's combined.
  • If the dough seems to soft you can add a little more flour, but it shouldn't be very hard.
  • Divide the dough in 4 parts and start making 4 rectangular layers.
  • Bake one at a time until they are golden brown, for about 8-10 minutes at 180°C.

For the semolina cream

  • In a sauce pan pour 500 ml of milk, add the sugar and the vanilla sugar. Once the milk starts to boil, gradually add the semolina.
  • Once it has cooled add the the softened butter and mix until you obtain a cream.
  • In order to assemble the cake you will first have to put over a layer of cake the semolina cream, another layer of cake, plum jam, another layer of cake and semolina cream and the last layer of cake.
  • On top you can dust with powder sugar or you can add chocolate and coconut flakes.
