It’s easy to make a sponge cake. You know why? Because most probably you have all the ingredients in you pantry or fridge.
It’s not that complicated or time consuming and in the end you can fill it with anything, fruits, creams, chocolate, cheese, jams.
I used a fresh cheese as a filling because we are just days before Christmas and you know cheese is white as snow.
Sponge cake with cheese filling
This is by far the easiest and yummiest cake you could do!
Ingredients
For the cake
- 8 eggs
- 16 tbsp sugar
- 4 tbsp oil
- 10 g baking powder
- 4 tbsp water
- 16 tbsp flour
For the filling
- 400 g fresh cow cheese
- 200 ml cream
- 4 tbsp sugar
- 10 g vanilla sugar
Instructions
- Preheat the oven at 180°C.
- In a large bowl add the egg yolks and the oil and mix it together.
- In a different bowl, beat the egg whites with 4 tbsp of water and the baking powder. Once they are foamy add the sugar a little at a time and beat on until the egg whites are firm.
- Add the egg yolks to the egg whites and the sift flour a tbsp at a time until everything is combined.
- In a pan place parchment paper, on the bottom and on the side and pour the batter into it.
- Leave it to bake for 25 minutes or until it passes the toothpick test. Once it's baked remove the parchment paper and let it cool.
For the filling
- Into a bowl pour the cheese and ½ of the sugar and vanilla sugar and mix it together.
- In a different bowl mix the cream with the rest of the sugar until it's fluffy.
- Combine the two together.
- Divide the cake in two parts and add the cheese, place the other half, and add some cheese on top. I also grated some white chocolate on top of the cheese.
